Fifi's fibre loaf

A simple and easy gluten-free bread loaf that’s rich in fibre, protein and plenty of unsaturated healthy fats. Literally mix it all together, bake and eat!

Enjoy it fresh or toasted and smothered in your favourite toppings!

-3 cups ground linseed
-1/2 cup of each: sunflower seeds, pumpkin seeds, chia or linseeds
-1/3 cup sesame seeds
-1 teaspoon salt
-1/4 cup vegetable oil (rice bran or canola)
-1 cup water
-3 eggs
To make a sweeter loaf, add 1T honey and 1/2 cup dried fruit of choice (apricot, prunes, sultanas, frozen blueberries)

1. Preheat oven to 160c fanbake.
2. In a large bowl, mix together all of the dry ingredients (ground linseed, all seeds, salt and dried fruit if using).
3. Add all wet ingredients to the bowl (water, oil, eggs) and stir to combine. Do not worry if the mixture seems quite sloppy. 
4. Transfer mixture to a lined loaf tin and bake for 60 minutes. 

This can be enjoyed fresh, toasted or freeze to consume as needed. If keeping fresh, keep in an air-tight container in the fridge for up to three-four days.
